I need breakfast: You'll find pre-cut fruit at both the LA Times Newsstand (near Gate 55) and Farmers Market To Go. For more heft, Skewers by Morimoto (which by day isn't very plant-based-friendly) has a veggie omelette that should tide you over. If it's caffeine you're after, Coffee Bean & Tea Leaf has lots of alt-milk options (almond, coconut, and soy) as well as matcha lattes (phew).
I need a snack: The terminals' newsstands all have the usual options—mixed nuts, Kind Bars, healthy-ish chips—but the LA Times Newsstand also has a hummus snack box that caught our eye. (Think: raw carrots and olives.) For something bubbly, go straight to Farmers Market To Go, which has kombucha on tap.
I need a real meal: Go straight to Lemonade (and then wonder why every terminal at LAX doesn't have one). The Cali chain does a range of salads (think curried cauliflower, tuscan kale and tangerine, avocado and tomato) that you can pile into a to-go container by the scoop, or make your own poke bowl.
I'm about to miss my flight but I'm starving: If you can make it to Gate 55 and back, LA Times Newsstand has hands-down the best grab-and-go options in the terminal--like, "Superfood Bowl" salads with quinoa and edamame best.
I need to fill up my water bottle: There's a bottle fill station across from the Farmers Market To Go (in addition to the usual water fountains).
